I love garlic and enjoy eating it prepared in many ways just for the fun of it. The first time I ever tried pickled garlic I knew it was something special just from rush I got and how good it made me feel even though I didn't know how special it really was then. While pickled garlic is worth eating just for the taste and snacking quality alone, I have learned that there are other aspects to pickled garlic that make it even better because of how it good it makes you feel and for how long.
One of the best things about pickled garlic is that eating it does not result in garlic breath, either primary (mouth/throat) or secondary (lungs, pores). The odiferous qualities of garlic come from the allyl mercaptan, which is destroyed by the pickling process, so eat all you want and don't worry about your social life.
While eating garlic raw, cooked or processed usually results in more odorous fat-soluble compounds, pickled garlic has less odorous water-soluble compounds. Fat-solubles pass from the stomach into the duodenum where they enter the lymphatic system and circulate via the lymphatic system whereas water-soluble compounds go through the stomach walls directly into the bloodstream - that's where the rush comes from.
One of the things that makes Kyolic garlic pills work is a water-soluble compound called S-Allyl Cysteine, which is produced as a result of Kyolic's ageing process. Research (Lawson & Wang 1995)shows that the longer garlic is stored in vinegar, the more S-Allyl Cysteine is produced continuously and it continues to build up for about 5 years - it gets stronger as it ages! As soon as the garlic is added to the vinegar, the vinegar works to convert the garlics' alliin into S-Allyl Cysteine and after about 60 days the vinegar has as much S-Allyl Cysteine as the garlic and it just continues to get stronger over the next five years.
Kyolic has spent millions of dollars on research which shows that S-Allyl Cysteine has numerous dose-dependent pharmacological effects when consumed in sufficient quantities and I harbor no doubts about the findings of hundreds of doctors worldwide.
Those benefits include lowering blood pressure a little, lowering blood sugar a little, lowering cholesterol a little and inhibiting platelet aggregation and that makes it difficult for bloodclots to form. Anti-tumor benefits, if any, are almost negligible.
Pickled garlic is the The perfect accompaniment to Kyolic or any other garlic pills because it has additional amounts of water-solubles thereby augmenting the pills benefits. Hot peppers are another natural companion to garlic in that hot peppers contain a natural vasodilator that temporarily dilates the blood vessels.
Recent studies have shown that taking medicines with grapefruit juice can maximize their effects (Sometimes dangerously so with prescription medicines - ask your doctor.) While I know of no studies saying so, it seems reasonable; therefore, that taking kyolic with grapefruit juice or washing pickled garlic down with grapefruit juice should give it an efficacy kick to the benefit of the consumer - not to mention another head rush.
