PD Farms is a small privately owned operation. Phil and Dianne Greif (pronounced Grife) started their venture in 2003 with a few heifer cows.
As the years progressed they expanded their cattle herd, and began gardening to supplement their own table fare.
At the suggestion of a neighbor they took some excess produce to a local farmers market,
where their success inspired them to increase the size of their garden plot, market their grass-fed beef in the same manner,
and explore other avenues of direct sales to new markets.
Today they offer a full variety of garden produce, a complete line of beef cuts, pet products and sell at the La Grande, OR, farmers market.
They are experimenting with processing some of these items to extend and expand their market.
Phil manages the farm. Which includes the cattle end, the garden end, and most of the cooking.
Phil spent 25 years working in the agriculture business and now gets to use that knowledge in his own operation.
Dianne is a school teacher by trade, a helping hand after hours, and someone to bounce new ideas off of when Phil is ready to try something new.

Romanian Red is another beautiful Porcelain garlic with a rich garlicky flavor and is usually the hottest of all garlics when raw. These roman candles are hot! Most Porcelain garlics are parchment white and straw-colored clove covers but Romanian Red is an exception as they have more color and sometimes more cloves than other Porcelain garlics. A rich, musky mellow Braiding Garlic from PD Farms
Harvests in mid-late summer - stores into mid-spring.
S and H Silverskin has long been a favorite because it is a late harvesting, richly flavored light-to medium pungency garlic that grows almost anywhere.
In addition to being very long storing its parchment-like bulb wrappers make it a very good braiding garlic.
Finally, a great braider that stores like a rock and grows well over most of the country, even in northern gardens but iffy along the gulf coast.
S and H Silverskin ranks 6-8 on the garlickiness scale and 3-4 on the pungency side but gets hotter the longer it stores.

Thermadrone from PD Farms.
Harvests in late spring/early summer season - stores into winter. Thermadrone is an excellent early season flavorful garlic from France. Thermadrone is a mild artichoke that adds to our collection of French garlics for authenticity in French cooking. Your French culinary creation cannot be truly authentic unless you use the same kinds of garlic that the chefs in France use - their tastes really are unique. Thermadrone has a dijon mustardy side tone to its flavor that is different than Asian and Italian garlics. It is a wonderful garlic and I highly recommend it for those who love French cooking. It is well worth growing and is a fairly early maturing garlic which you can be enjoying while most of the others are still in the ground. Transylvanian is the mysterious early season flavorful garlic from Transylvania. Finally, you can grow the famous Transylvanian garlic and it will grow almost anywhere in the USA though the more tropical areas may be a bit of a gamble. If you are troubled by vampires or just blood-sucking in-laws,it is well worth growing and is a fairly early maturing garlic which you can be enjoying while most of the others are still in the ground. - Sorry, sold out for 2011 but next year you will be able to order garlic scapes for shipment in May/June 2012. - Scapes are stalk-like growths that form in hardneck varieties of garlic in the spring and form bulbil capsules at their tops if left to maturity. Scapes are highly prized for being much more delicately flavored and less pungent than mature garlic. When scapes first form they are delicately garlicky and tender and succulent and crisp when eaten raw. The longer they age; however, the more chewy they become until they eventually become fibrous and less desireable to eat so they need to be enjoyed fairly soon as they don't remain at their prime long. They store well in the refrigerator's crisper for a couple of weeks or so but then become progressively chewier.
Scapes are highly sought after because they have many of the things people like about garlic but have a
distinctly milder and more delicate flavor.
Most importantly, they are available in the spring when no other form of decent garlic has been available for
months. Not only are they an oasis in a desert but their delicate flavor makes them a doubly welcome treat.
When eaten raw, scapes have a milder taste with a mellow shallot-like flavor to it although some can be quite sharp and with a distinctively pleasant aftertaste. All scapes do not taste the same, some cultivars are milder or stronger than others just like in the mature bulbs. - Sorry, Sold out for 2011.

Nothing suggests old country skills quite like a garlic braid; they're beautiful to look at and a symbol of
abundance and good times. They are also very practical ways to store garlic for use in the kitchen.
Garlics with leaves and roots attached store longer than the same kind that have been trimmed. On braids
though, roots are usually trimmed off for aesthetic purposes.
Any softneck garlic can be braided but Silverskins make the best braiders because they are the longest
storing of all garlics and also the last to harvest each year. Another plus for Silverskins is that they have
more pliable necks and sturdier fibers that store longer than Artichokes so we don't use Artichokes in Braids,
only Silverskins.
Most garlics usually store through winter and do not make it into spring but Silverskins often store all the
way through spring.
The longer a garlic stores, the hotter and stronger it gets so that a garlic can be mellow/mild in the fall
and will be medium/strong during the winter and hot/strong during the spring.

being much more delicately flavored and less pungent than most onions. They don't store as long as onions or
garlic and so need to be enjoyed in season.
Shallots are worthy of great respect because they have many of the things people like about onions and garlic
but have a distinctly milder and more delicate flavor. Shallots have a magnificent crispness when eaten raw but
little of the pungency and odor of onions or garlic and it doesn't smell as bad when you get it on your hands..
Shallots can store for a couple of months or so at room temp from the time of harvest, usually June.
French Red Shallots have a milder taste with a delicate distinctly onion-like hint to it and a pleasant mellow aftertaste. Sorry, sold out for 2011.

This Farmers market is like your local farmers market.
If you buy from a grower and later cancel that order for any reason, the credit card processing gateway still charges Gourmet Garlic Gardens the full processing
fee plus an additional fee of the same amount for processing the cancellation and also it places an additional clerical burden on us
so, regretably, we must charge a 15% cancellation fee when processing the cancellation because that's about what it costs us.
My advice is to look around among the various growers and decide what to buy from whom and then place your orders and stick with the growers you have chosen.

![]() How Our Garlics are Grown
All the garlic for sale in our online farmers market was grown without the use of petrochemical pesticides,
herbicides, or fertilizers; only natural and non-toxic fertilizers and pest control methods are used.
Some of our growers are Certified Organic and some are Certified Naturally Grown, which we regard as equal to
Certified Organic in every meaningful way but without all the bureaucratic entanglements.
All our farmers market growers grow organically and some are Certified Organic but not all want to be certified
Organic because of the paperwork and reporting requirements and are among the best available sources of sustainable/
organic Garlic and they become Certified Naturally Grown, where the regulation comes from their fellow members rather
than a federal bureacracy.
We do not allow growers who use synthetic petroleum-based fertilizers, pesticides, fungicides or herbicides to
participate in our farmers market.
All garlic in our farmers market is grown in the USA, no imports allowed. ![]() |
