Maplewood Gardens

David Peterson is a multi-talented man from Elderon, in north-central Wisconsin. Dave has turned an old tumbledown house on a weed patch into a beautiful home with 14 gardens and a maple woods where he produces maple syrup. In addition to growing gourmet garlic, Dave runs a Certified Organic Community-Supported-Agriculture business and sells produce in area farmers markets and is active in several communities in his area. I don't know how he finds time or the energy to make a little music with his friends occasionally but he does.

One good look at his growing operation makes you want to buy some of his produce. He is clearly motivated and hard working. His place and all his gardens are lush tributes to the organic principles that he lives by. Chesnok Red
Hardneck Purple Stripe garlic from Maplewood Gardens

Chesnok Red is a beautiful Purple Stripe garlic rich medium flavor that becomes very sweet when baked. Grows well in most of the USA.

Chesnok Red is a beautiful very rich flavored and moderately pungent Purple Stripe garlic with a lot of purplish color to the bulb wrappers. Harvests in late June - stores all winter long.

It is good to grow these along with an earlier harvesting kind and a longer storing kind so You may not ever run out of good garlic.

Grows well in most of the USA except the warmest winter areas of the country.

Georgian Crystal
(Hardneck Porcelain garlic) from Maplewood Gardens

Georgian Crystal is another beautiful Porcelain garlic with a rich garlicky flavor but is the mildest Porcelain in hotness when raw.

Most Porcelain garlics are parchment white and straw-colored clove covers and Georgian Crystal is no exception. Georgian Crystal is a beautiful very long storing garlic with a very rich garlicky flavor that is only moderately warm when eaten raw, certainly not overly hot. Grows well in most areas of the USA Grows great in the northernmost locales.

Usually harvests in late June/early July and stores into spring at room temp.

Georgian Fire (Hardneck Porcelain garlic) from Maplewood Gardens

Georgian Fire is another beautiful Porcelain garlic with a rich garlicky flavor and is one of the hottest Porcelains when raw.

Most Porcelain garlics are parchment white and straw-colored clove covers and Georgian Fire is no exception. Georgian Fire is a beautiful very long storing garlic with a very rich garlicky flavor that is only moderately warm when eaten raw, certainly not overly hot. Looks exactly like its mild-mannered cousin, Georgian Crystal but is very hot when raw. Grows well in most areas of the USA Growe great in the northernmost locales.

Killarney Red
Hardneck Rocambole garlic) from Maplewood Gardens

Killarney Red is a Rocambole garlic with a rich, musky, garlicky flavor and is very hot when eaten raw.

Rocambole garlics have brownish-purplish bulb wrappers and easy to peel brownish clove covers and so does Killarney Red. Rocamboles are valued for being early harvesting full flavored garlics that you can enjoy while waiting for the longer storing ones to mature and harvest. Killarney Red's cloves are all of similar large size with no small cloves.

Usually harvests in late June/early July and stores into mid-winter at room temp.

Grows great in the northernmost locales but the further south you get the more difficult they are to grow and forget about growing them in the south.

Canadian Music
Cold winter hardneck Porcelain garlic from Maplewood Gardens

Most Porcelain garlics are parchment white but Music is an exception and can have some nice color to it. Music is a beautiful very long storing garlic with a very rich garlicky flavor that is only moderately hot when eaten raw but not overly hot. Grows well in most areas of the USA Grows great in the northernmost locales.

Usually harvests in July and stores into mid-spring at room temp.

Romanian Red
Long storing hardneck Porcelain garlic from Maplewood Gardens

Romanian Red is another beautiful Porcelain garlic with a rich garlicky flavor and is usually the hottest of all garlics when raw. These roman candles are hot!

Most Porcelain garlics are parchment white and straw-colored clove covers but Romanian Red is an exception as they have more color and sometimes more cloves than other Porcelain garlics. Romanian Red is a beautiful very long storing garlic with a very rich garlicky flavor that is fiery hot when eaten raw. Grows well in most areas of the USA, grows great in the northernmost locales.

Usually harvests in late July and stores into mid-spring at room temp.

- Garlic Scapes from Maplewood Gardens -

Available only in late spring/early summer, around summer solstice, for immediate use.

Scapes are stalk-like growths that form in hardneck varieties of garlic in the spring and form bulbil capsules at their tops if left to maturity. Scapes are highly prized for being much more delicately flavored and less pungent than mature garlic.

When scapes first form they are delicately garlicky and tender and succulent and crisp when eaten raw. The longer they age; however, the more chewy they become until they eventually become fibrous and less desireable to eat so they need to be enjoyed fairly soon as they don't remain at their prime long. They store well in the refrigerator's crisper for a couple of weeks or so but then become progressively chewier.

Scapes are highly sought after because they have many of the things people like about garlic but have a distinctly milder and more delicate flavor. Most importantly, they are available in the spring when no other form of decent garlic has been available for months. Not only are they an oasis in a desert but their delicate flavor makes them a doubly welcome treat.

When eaten raw, scapes have a milder taste with a mellow shallot-like flavor to it although some can be quite sharp and with a distinctively pleasant aftertaste. All scapes do not taste the same, some cultivars are milder or stronger than others just like in the mature bulbs.

Important notes for credit/debit card users:

This Farmers market is like your local farmers market.

When using your credit/debit card to buy direct from different growers, a separate order is required for each grower. You may buy as many different kinds of garlic as you want from any grower on any order but each grower requires a separate order. If you want to order garlic from more than one grower, a separate order must be placed with each grower.

If you buy from a grower and later cancel that order for any reason, the credit card processing gateway still charges Gourmet Garlic Gardens the full processing fee plus an additional fee of the same amount for processing the cancellation and also it places an additional clerical burden on us so, regretably, we must charge a 15% cancellation fee when processing the cancellation because that's about what it costs us. My advice is to look around among the various growers and decide what to buy from whom and then place your orders and stick with the growers you have chosen.

How Our Garlics are Grown

All the garlic for sale in our online farmers market was grown without the use of petrochemical pesticides, herbicides, or fertilizers; only natural and non-toxic fertilizers and pest control methods are used.

Some of our growers are Certified Organic and some are Certified Naturally Grown, which we regard as equal to Certified Organic in every meaningful way but without all the bureaucratic entanglements. All our farmers market growers grow organically and some are Certified Organic but not all want to be certified Organic because of the paperwork and reporting requirements and are among the best available sources of sustainable/ organic Garlic and they become Certified Naturally Grown, where the regulation comes from their fellow members rather than a federal bureacracy.

We do not allow growers who use synthetic petroleum-based fertilizers, pesticides, fungicides or herbicides to participate in our farmers market.

All garlic in our farmers market is grown in the USA, no imports allowed.
This farmers market is strictly for small-scale American market gardeners/growers who live and grow sustainably..
