Keene Organics is a Certified Organic family farm of Marshall,WI, located in low rolling hills near Madison in South central Wisconsin.
In addition to many different kinds of gourmet garlic we also growa variety of vegetables, berries, herbs and hickory nuts that we sell at Madison's local farmers markets, restaurants and small grocery stores.
We also raise pastured meat chicken and free-range eggs.
We live a sustainable lifestyle and would never use any petrochemical or toxic soil additives anymore than we would grow GMO plants.
We won't subject our children to toxins nor yours either.
We sustainably manage our soil to ensure that we have the proper balance of nutrients and minerals to produce the healthiest vegetables, garlic, berries, and herbs.

Amish is a Rocambole garlic with a rich, musky, garlicky flavor and is very hot when eaten raw.
Rocambole garlics have brownish-purplish bulb wrappers and easy to peel brownish clove covers and so does Amish.
Rocamboles are valued for being early harvesting full flavored garlics that you can enjoy while waiting for the longer storing ones to mature and harvest.
Amish's cloves are all of similar large size with no small cloves.

Finally! Someone has a delicious Rocambole that is not hot.
Bavarian is an early harvesting, richly flavored lightly pungent garlic that grows well in cold winter areas.
In addition to being early harvesting, it is very easy peeling and stores long enough to be planted in the fall but not much longer.
Grows consistently large bulbs with large cloves
Bavarian ranks 7-9 on the garlickiness scale and 1-2 on the pungency side.
It has a very rich, musky, earthy flavor with only a little bite, if what I taste tested last year was its normal taste.

Attractive, delicious & one of the best roasting garlics.
Plants produce flat-bottomed, purple-striped bulbs with 8-12 tall, crescent-shaped, dark red-skinned , easy to peel cloves.
Stores longer than most other hardnecks and has out-performed most of our other hardnecks.

German Extra Hardy (cold winter hardneck Porcelain garlic) from Keene Organics
German Extra Hardy is a big, robust, strong, full flavored, hardy, long storing hardneck garlic.

Inchelium Red is an early-mid season harvesting medium-rich flavored and medium pungent softneck Artichoke with straw-colored clove covers

Music (cold winter hardneck Porcelain garlic) from Keene Organics
Most Porcelain garlics are parchment white but Music is an exception and can have some nice pink color to it.
Music is a beautiful very long storing garlic with a very rich garlicky flavor that is only moderately hot when eaten raw but not overly hot.
Grows well in most areas of the USA but grows great in the northernmost locales.

It has long been an upstate New York gardener's favorite because it is an early harvesting, richly flavored light-to medium pungency garlic that grows almost anywhere.
In addition, its parchment-like bulb wrappers make it a very good braiding garlic.
NY White is an excellent early season braider for northern gardeners - they mature a month or two before the Silverskins.
It's a very good grower's garlic as it has many large cloves (even the innermost cloves are of good size) and it stores well.
New York White ranks 6-8 on the garlickiness scale and 3-4 on the pungency side.
It has a rather rich, musky, earthy flavor and a little bite, but is still on the light side.

Silverwhite has long been a favorite because it is a late harvesting, richly flavored light-to medium pungency garlic that grows almost anywhere.

Tzan originated in the Shan Dong province of China and is an early harvesting very rich flavored and hotly pungent garlic with straw-colored clove covers
and some color in its bulb wrappers.
This year we hope to resolve the question as to whether it is an Artichoke, Asiatic or Turban garlic.
What we know for sure is that this is a good, flavorful, hot, strong early harvesting garlic.
Being an early season garlic, Tzan is adaptable to a wide range of climates and is a good garlic for growing in
warm winter areas as well as cold winter areas, especially in conjunction with later harvesting long storing varieties.

Available only in late spring/early summer, around summer solstice, for immediate use. - sorry, no more garlic scapes available FOR 2011. - Scapes are stalk-like growths that form in hardneck varieties of
garlic in the spring and form bulbil capsules at their tops if left to maturity.
Scapes are highly prized for being much more delicately flavored and less pungent than mature garlic.
When scapes first form they are delicately garlicky and tender and succulent and crisp when eaten raw.
The longer they age; however, the more chewy they become until they eventually become fibrous and
less desireable to eat so they need to be enjoyed fairly soon as they don't remain at their prime long.
They store well in the refrigerator's crisper for a couple of weeks or so but then become progressively chewier.
Scapes are highly sought after because they have many of the things people like about garlic but have a
distinctly milder and more delicate flavor.
Most importantly, they are available in the spring when no other form of decent garlic has been available for
months. Not only are they an oasis in a desert but their delicate flavor makes them a doubly welcome treat.
When eaten raw, scapes have a milder taste with a mellow shallot-like flavor to it although some can be quite sharp and with a distinctively pleasant aftertaste. This Farmers market is like your local farmers market.
If you buy from a grower and later cancel that order for any reason, the credit card processing gateway still charges Gourmet Garlic Gardens the full processing
fee plus an additional fee of the same amount for processing the cancellation and also it places an additional clerical burden on us
so, regretably, we must charge a 15% cancellation fee when processing the cancellation because that's about what it costs us.
My advice is to look around among the various growers and decide what to buy from whom and then place your orders and stick with the growers you have chosen.

![]() How Our Garlics are Grown
All the garlic for sale in our online farmers market was grown without the use of petrochemical pesticides,
herbicides, or fertilizers; only natural and non-toxic fertilizers and pest control methods are used.
Some of our growers are Certified Organic and some are Certified Naturally Grown, which we regard as equal to
Certified Organic in every meaningful way but without all the bureaucratic entanglements.
All our farmers market growers grow organically and some are Certified Organic but not all want to be certified
Organic because of the paperwork and reporting requirements and are among the best available sources of sustainable/
organic Garlic and they become Certified Naturally Grown, where the regulation comes from their fellow members rather
than a federal bureacracy.
We do not allow growers who use synthetic petroleum-based fertilizers, pesticides, fungicides or herbicides to
participate in our farmers market.
All garlic in our farmers market is grown in the USA, no imports allowed. ![]() |
