Garlic, the Gift That Keeps on Giving, Year After Year.

Gourmet Garlic Varieties for Sale

We try to maintain, during the late summer/fall season, from 12 to 24 garlic varieties for you to choose from. You might try all mild varieties, all strong or medium flavored varieties, or any mix of your choice. Go ahead and experiment, try several different kinds. If you would like a detailed description of any of these garlics, just click on the name of the variety. Our garlic is sold by the pound at $16 per pound (assortments, rare varieties or premium/colossal sizes may be more) with a minimum order of one pound.


Size and Availability

Not all garlics are the same size. What may be large for one variety may be small for another and bulb size is a function of the variations of weather. Metechi, for example, is natively larger than Burgundy but Burgundy grown in good conditions may be bigger than Metechi grown in dry weather.

The orders placed first will be shipped first and with the best available bulbs of each variety ordered.

Because we have more of some varieties than others, some varieties may be sold out earlier than others. So that we disappoint fewer people, we reserve the right to limit quantities of certain varieties in order that more people may enjoy them.

It is my intent to send a little garlic to a lot of small gardeners rather than a lot of garlic to a few large growers. I want to be able to make these gourmet garlics available to everybody not just a few.

We will keep this list updated so that if we sell out of any variety, it will be removed from the list.

We do not guarantee minimum diameters, but the Extra-Large and Premium sizes we fill our by-the-pound orders with are usually around 2 1/4" to 2 1/2" in diameter (6 to 8 to the pound). We put slightly smaller 2" or so sizes (10-12 to the pound) in our assorted sampler packs so we can give the customer as many varieties as possible. NOTE - All garlic slowly shrinks and loses weight continuously due to its natural dehydration cycle. Remember, size is relative to the particular variety, as the largest Creole Silverskins might be no bigger than the medium large Artichokes, but would store longer and look and taste different. Quality, taste, storeability and other factors are more important than size. Some varieties cost more just because they are rare and very hard to find and expensive when you do find them.

But we'll try to get you an equivalent alternative but we won't substitute if you tell us not to.

The list below is typical of what we have for sale and in 2009 and will change as availability of each kind changes - we have been adding and subtracting varieties all season long. I try to keep these lists fairly current so that they can be used as a realistic guide to what we have in stock but we often sell out fast. Sometimes we sell out and before I can change this list someone places an order for a garlic we no longer have.

Our secure shopping cart/card processing gateway charges all cards at the time of the sale and we can't change that. That's good for our customers because the earliest paid orders get the best selection. The last two years there were shortages caused by weather-related crop failures all over the country and only the early orders got filled as we had to cancel about 100 orders that came in later and turned away around 300 more. Early payment gives you your best opportunity to get the best bulbs of the varieties you want.

Pre-paying your order early does not guarantee we will have the garlic you have asked for since sometimes there are no available stocks of certain kinds of garlic due to nationwide weather -related crop losses, but it does assure you an early place in line if we can get any of the garlic you ordered. Sometimes unforseeable things happen and we can't get a garlic you have ordered, then we will let you choose between a substitute or a refund.

If you find this unworkable for you, please use the secure shopping cart to place a mail order or a telephone order and in the customer comments section request that I call or email you when the garlic is ready to ship immediately. You can replace your credit/debit card order at that time, if we still have garlic available, the system will remember your name, address, etc. so you won't have to re-type it. I receive a copy of all telephone and mail orders the shopping cart prints for customers. It's not a guarantee but we usually have garlic long after most growers are sold out but not always. Getting the garlics you want can be an uncertain thing and we try to improve your odds of getting what you want.

We are now accepting pre-paid orders for shipping in late summer/early fall of 2009. We will be adding and deleting and changing the status of varieties often as we sell out our stocks (We always sell out) so check back regularly to see what we currently list as available.

Elephant garlic is sold as whole bulbs early in the season and later on as loose individual cloves without the basal plates and hardneck stubs as they add useless weight and elephant garlic naturally separates that way anyway - $16. per pound.

All weights and sizes are approximate, not guaranteed, since all garlic shrinks in size and loses weight with storage - It weighed over a pound when it left here.

Each Variety will come in its own clearly marked bag so you can tell them apart.

The minimum order quantity is one pound of garlic; however, you may order as many additional pounds as you wish over that amount (except for Creoles or other limited varieties). Additional pounds add two dollars each to the S&H charge.

Shipping and Handling

A fee of $8.00 is charged for each shipment of one pound of garlic; add two additional dollars for each pound, or any fraction of a pound, over the first pound ordered.

For example, if your order is 2 pounds, the charge is $10.00 and if you order 3 pounds, the charge is $12.00, etc. This rate applies to all 50 United States.

All items in any order will be shipped as a single unit and at the same time, unless otherwise specified by the customer and separate shipping charges paid for each shipment.

New - February 7, 2009 - We may or may not have some Virus-Free Gourmet Garlics in 2009.

Big News - There may be three cultivars of very rare Virus-Free garlic available this fall.

In 2008 we were very lucky to be able to get three cultivars of Virus-Free (V-F) gourmet garlic , some Duganski, a Marbled Purple Stripe and some California Late, an Artichoke but the Sofia, a Rocambole from Bulgaria got flooded out and will not be available until maybe 2009. Not even virus-free garlic is exempt from the ravages of nature and while much of the garlic crops in the NW part of the country were greatly stunted by cool, damp and cloudy spring that never did warm up until well into summer, two of the three V-F varieties did quite well and were of good size in a world of smaller garlics.

The problems with the 2008 V-F garlic crop -
In addition to the weather-related problems that plagued last year's V-F garlics there were some misshapen bulbs and other problems caused by machine planting and machine harvesting and conveyor belts dumping loads of garlic on top of loads of garlic resulting in massive bruising. This is not the way conscientious growers handle the gourmet garlics they are proud of. The garlic was grown by a grower who uses techniques developed for handling mass amounts of garlic for the mass market, like supermarkets and commercial kitchens where the handling standards are not as strict as gourmet growers impose upon themselves and the garlic clearly shows the difference. There were also some unidentified brown spots and other artifacts of a cold wet spring/early summer.

I will order a few pounds for evaluation this year (2009) and if there were better growing conditions this year and if the handling is a lot gentler and has a lot less dings, bruises and bad spots I will consider ordering more; if not, I will pass until the V-F garlic improves.

These V-F gourmet garlics could be good news for growers all over the country and especially the warm winter growers have something to cheer about as the Artichokes and Marbled Purple Stripes both do well in warm winter areas. A Marbled Purple Stripe called Metechi is always the biggest and best in our garden year after year.

Why does virus-free have any special appeal and how do they do it? At this point I'm not entirely clear as to all the features and benefits of virus-free garlic but I can tell you how they are developed and that ridding a cultivar of virii causes the garlic to grow larger and heavier than the same cultivars the contain virii. I'm not sure what effects being virus-free has on the health benefits of garlic but researchers have shown in the past that denser, heavier varieties, Porcelains, in particular had greater capability to produce Allicin, from which the most healthy fat-soluble compounds are derived.

All natural garlics contain some viruses; it's what happens out in the wild, life happens. These viruses have no known harmful effects on humans but apparently only affect the garlics and most of their effects are unknown although a few are; for example, the yellow streak virus carried by wheat curl mites cause a garlics leaves to show some yellow streaks but their effects on the clove is minimal if anything. If a garlic bulb has a viral contamination, and they all do, almost every part of the plant is affected. All, in fact but the tiniest growing tip where the virus has not yet gotten a grip on the plant. This tiny growing tip, called a meristem, is snipped out under a microscope and tediously grown out from that tip and that virus-free tip will eventually grow into a full size plant and develop a bulb with multiple cloves and the cloves will also be virus-free and can be replanted to produce virus-free offspring. It takes several years of replanting all or most of the cloves for a single virus-free bulb to reproduce into a marketable number of bulbs to base a virus-free seed garlic business on. They are still a few years from widespread distribution.

Removing the viruses causes the bulbs to get bigger and denser. This is only the second effort I know of ever to produce virus-free garlic. The earlier one was done in California in the 1980s but the grower discontinued his program because it produced such large garlics , over 3" in diameter, that he had a hard time selling such large garlics and he quit doing it. I understand he is retired now and no longer involved. Our virus-free garlics were produced by a different retired plant pathologist and grown in Oregon and we're ready to try again so we can see for ourselves what the results are and are inviting our customers to try them also and see how they do for them.

To my knowledge, we are the only place in the country at this time offering virus-free garlics for sale on the internet although there may be others I don't know about. They were not grown organically and normally we would not handle such garlic but since there is no source of organically grown virus-free garlics, these can be introduced into an organic operation and their offspring, if grown by a certified organic grower would become certified organic next year. They're a little pricy but so is everything that is truly rare.

Are virus-free garlics acceptable in an organic program? I don't know as I have never seen any prohibition against it. It is not a genetically modified organism, it is only a modern extension of the ancient art of rooting plants to produce offspring. Do virus-free garlics have the same health benefits? I don't know but I would think so since the chemical reactions would seem to be unchanged by the presence or absence of the viruses. Are these particular viruses any kind of enemy? I doubt it. Does eliminating the viruses have any kind of advantage? Only in that the garlic grows larger and denser with the same effort and most growers find that to be a desireable trait.

What is the future of these V-F garlics? How long will they stay virus-free? I don't know. Nobody knows how many years it took garlic to pick up all its virii. Nobody knows how long it would take to re-acquire some more of them via insects, etc. or how often new virus-free planting stock would have to be purchased in order to assure an essentially virus-free crop. We're stepping out on unexplored turf here. Whacking out new trails, so to speak. We'll learn as we go.

Just select how many pounds you want of which varieties and of what size and use our shopping cart and your credit card to buy on line.

You can also use the shopping cart to pay by check for mail order because it will print out an order form for you to mail - saving you a lot of writing.

You can also use it to prepare and summarize your order on an order form to have in front of you when call us - and you can print it out and keep a written copy for your records.


Since we would like you to experience the joys of these delectable garlics and accessories, we have tried to make the buying process as simple, secure and convenient as possible. An important note - we would never give away or sell our customer list to anyone without the prior consent of each customer involved. I have received many unwanted sales solicitations because companies have sold my name to other organizations without my permission and I would not treat others in this way.

Since we set up to accept credit cards, it's doubly important to assure confidentiality of personal and financial information. The Shopping Cart is on a seperate, secure website and the actual credit card transactions are on a third, secure website. The shopping cart and payment gateway automatically charges all cards at the time the order is placed. It is an automated process that we can't interfere with.

We and our growers take great care to grow, harvest, cure and store our garlic properly and we will not knowingly ship garlic that is damaged, defective or diseased in any way we can see, feel or smell. We pack the garlic so as to minimize any probability of damage in shipment. If; however, you receive defective garlic, please e-mail us immediately stating the problem and return the defective garlic to us within 30 days via Priority US Mail and we will replace it at no additional charge, or refund your money. It is our desire to provide our customers with the best garlic we can produce and enhance our reputation for excellence - but we cannot be held responsible for what happens after the garlic leaves our care.

All products are for sale to United States addresses only. We are not familiar with import-export laws and do not wish to engage in foreign trade at this time. All sales are made in accordance with the laws of the State of Texas and Texas law applies to all sales. Every state has different laws and we cannot know them all. If your state has some regulation against the importing of garlic or other fresh foods, it is your responsibility to be aware of these laws and act accordingly.
